Curried Barley & Chickpea Salad

This salad is aromatic, flavourful and easy to put together.

Ingredients
  

  • 2 cups coconut curried barley cooked
  • 2 cups cherry tomatoes sliced in half
  • 1 cup cucumbers sliced
  • ¼ cup red onions
  • 1 15 oz can chickpeas
  • 2 tbsp feta cheese crumbled
  • ¼ cup red, yellow, green and orange sweet peppers each
  • ¼ cup olives

Instructions
 

  • Slice tomatoes, chop onions, peppers and cucumbers.
  • Drain and rinse the chickpeas. 
  • In a large bowl, add the curried chickpeas, chopped vegetables, chickpeas, feta and feta cheese. 
  • Toss all ingredients to combine.
    Serve as a side or main dish.  Bon apetite!
