Curried Barley & Chickpea Salad
This salad is aromatic, flavourful and easy to put together.

- 2 cups coconut curried barley cooked
- 2 cups cherry tomatoes sliced in half
- 1 cup cucumbers sliced
- ¼ cup red onions
- 1 15 oz can chickpeas
- 2 tbsp feta cheese crumbled
- ¼ cup red, yellow, green and orange sweet peppers each
- ¼ cup olives
Slice tomatoes, chop onions, peppers and cucumbers.
Drain and rinse the chickpeas.
In a large bowl, add the curried chickpeas, chopped vegetables, chickpeas, feta and feta cheese.
Toss all ingredients to combine.Serve as a side or main dish. Bon apetite!
